Coconut Cream Tempeh Skewer

Healthy Recipe: Tempeh Skewer with Coconut Cream

Healthy recipe for 2 people / Preparation: 10 mins / Cooking: 15 mins / Rest: 2 hours 

Ingredients :

  • 200g of tempeh
  • Tamari soy sauce (gluten free): 2 tablespoons
  • Honey: 2 tablespoons
  • Sesame oil: 2 tablespoons
  • Olive oil: 1 tablespoon for cooking
  • A few salad leaves

For the coconut sauce: 

  • 20cl of coconut cream
  • 10 mint leaves 
  • 1 shallot
  • 1 lime
  • Salt
  • Pepper

Preperation : 

  • Cut the tempeh into large cubes and steam them for 10 mins. 
  • Mix the soy sauce with the honey and sesame oil and marinate the cooked tempeh in it for 2 mins.
  • Wash and wring out the salad
  • Peel and finely chop the shallot 
  • Finely chop the mint leaves 
  • In a bowl, mix the coconut cream with the shallot, mint and squeezed lemon juice
  • add salt and pepper 
  • On 6 wooden skewers, assemble the skewers by placing the cubes of tempeh
  • In a frying pan, heat the olive oil
  • Place the skewers and sprinkle with the marinade
  • During cooking, turn the skewers regularly so that they caramelize
  • Serve the kebabs hot with the coconut cream sauce
  • Enjoy your lunch !
