
Croque-monsieur with tofu and vegetables

Vegan gluten-free recipe
Ingredients :
- 4 gluten-free bread or gluten-free cloud bread
- almond or peanut puree
- 100g smoked tofu
- 25cl of lactose-free and gluten-free bechamel or 50g of vegetable cheddar (1/2 butternut and a few cashews)
- Fresh vegetables: beans, spinach, zucchini, carrots, peppers, sprouted seeds … (your choice)
Tips: For colorful breads, garnish them with paprika or sweet pepper
Vegetable cheddar:
- Mix pieces of cooked butternut squash with cashews
- Dry the vegetable cheddar in a saucepan over low heat, mixing everything regularly
Preperation :
- Spread a slice of bread with almond puree
- Layer a few slices of smoked tofu and vegetable cheddar cheese and raw or cooked vegetables (your choice)
- Cover with the second slice of bread
- Bake for a few minutes in a lightly oiled croque monsieur machine or in the oven at 200 ° C
