Eggplant and sage chili

Healthy recipe: aubergine and sage chili

Preparation: 5 min / Cooking: 50 min

Ingredients for 4 persons

  • a can of red beans (500g)
  • 2 eggplants
  • 6 tablespoons of olive oil
  • 1 bunch of sage
  • 20 cl of tomato coulis
  • 5 cl of water

Preperation : 

  • cut the eggplants into cubes and brown them in a casserole dish for 5 minutes in olive oil
  • add the drained red beans, the tomato coulis, 5cl of water, sage, salt and pepper
  • mix
  • simmer 45 minutes, stirring regularly
