
Healthy recipe: Eggplant stuffed with mozzarella

Ingredients for 4 persons
- 4 aubergines
- 20 cl of tomato coulis
- 2 balls of mozzarella
- a few leaves of fresh cilantro (can be replaced with thyme or basil)
- 4 teaspoons of sesame
- 4 tbsp olive oil
- salt and pepper
Preperation :
- preheat the oven to 170 ° C
- cut the eggplants in half and core them without piercing the skin
- dice the flesh and mix it with the tomato coulis, basil and mozzarella cut into small pieces
- stuff the eggplants then place them in a gratin dish and sprinkle them with olive oil
- salt and pepper to taste and bake for 1 hour
- sprinkle with sesame seeds before serving
