Healthy recipe: Eggplant stuffed with mozzarella

Ingredients for 4 persons

  • 4 aubergines
  • 20 cl of tomato coulis
  • 2 balls of mozzarella
  • a few leaves of fresh cilantro (can be replaced with thyme or basil)
  • 4 teaspoons of sesame
  • 4 tbsp olive oil
  • salt and pepper

Preperation : 

  • preheat the oven to 170 ° C
  • cut the eggplants in half and core them without piercing the skin
  • dice the flesh and mix it with the tomato coulis, basil and mozzarella cut into small pieces
  • stuff the eggplants then place them in a gratin dish and sprinkle them with olive oil
  • salt and pepper to taste and bake for 1 hour
  • sprinkle with sesame seeds before serving
