Healthy 3 in 1 summer recipe: Hot tomato velouté / Cold gazpacho / Tomato coulis to enhance your gratins and pasta!

Ingredients for 4 people:
– 200g of feta
– 1 beef heart tomato
– 1 pineapple tomato
– 1 peach
– 1 nectarine
– 1 spring onion
– 300g of cherry tomatoes, cocktail or mini-pears
– a few basil leaves
– a pinch of oregano
– a sprig of rosemary
– olive oil
– balsamic vinegar

Preparation:
– Preheat the oven to 180 ° C
– Wash and cut the tomatoes into pieces, the fruit into slices, the onion into strips and mix them in a salad bowl. Add the oregano and the sprigs of rosemary.
– Add 4 tablespoons of olive oil and 6 tablespoons of balsamic vinegar.
– Add salt and pepper. Stir.
– Place everything on a baking sheet. Add the sprig of rosemary.
– Cook for 15 to 20 min.
– Mix everything.
– For a coulis tasting, add the feta to the mixture and pour into your preparation.
– For hot tasting, pour into a bowl or a deep plate. Place a few pieces of feta and a few basil leaves on top.
