
Ingredients :
- 50g green salad
- 100g of asparagus
- 50g cherry tomatoes
- 1/2 apricot
- 40g strawberries
- 1 egg
- 20g goat cheese
- 1 teaspoon of mustard
- 1 tablespoon of olive oil
- 1 tablespoon of apple cider vinegar
- Salt pepper
Preperation :
- Cut off the end of the asparagus, peel the last third and rinse them. Immerse them in a pot of boiling water for 3 minutes.
- Rinse and cut into equal pieces the cherry tomatoes, the apricot half and the strawberries.
- Clean and cut the salad into strips.
- Cook the egg “soft” egg: 3 minutes in boiling water.
- Arrange all the ingredients on the salad and add the goat cheese and egg.
- In a bowl, mix the vinegar, mustard, salt and pepper with a fork. Gradually add olive oil to form a smooth vinaigrette.
- Pour the vinaigrette over the salad and enjoy!
