Mixed asparagus salad with summer fruits & vegetables

Ingredients :
  • 50g green salad
  • 100g of asparagus
  • 50g cherry tomatoes
  • 1/2 apricot
  • 40g strawberries
  • 1 egg
  • 20g goat cheese
  • 1 teaspoon of mustard
  • 1 tablespoon of olive oil
  • 1 tablespoon of apple cider vinegar
  • Salt pepper

Preperation : 

  • Cut off the end of the asparagus, peel the last third and rinse them. Immerse them in a pot of boiling water for 3 minutes.
  • Rinse and cut into equal pieces the cherry tomatoes, the apricot half and the strawberries.
  • Clean and cut the salad into strips.
  • Cook the egg “soft” egg: 3 minutes in boiling water.
  • Arrange all the ingredients on the salad and add the goat cheese and egg.
  • In a bowl, mix the vinegar, mustard, salt and pepper with a fork. Gradually add olive oil to form a smooth vinaigrette.
  • Pour the vinaigrette over the salad and enjoy!
