
Vegan recipe: seitan steak to replace meat
Preparation 1h15 / 4 people / 295 calories per steak (p: 42g / g: 22g / l: 4g)
Ingredients :
- 125g of wheat gluten
- 250g cooked green lentils
- 6 tablespoons of water
- 2 tablespoons of yeast
- 2 tablespoons of tomato puree
- 2 tablespoons of soy sauce
- 1 teaspoon of garlic powder
- 1 teaspoon of green tea powder
- 1 teaspoon of liquid smoke
- 1 pinch of pepper
For the marinade:
- 60ml water
- 2 tablespoons of olive oil
- 2 tablespoons of soy sauce
- 1 tablespoon of maple or agave syrup
Preperation :
- Add all the ingredients for the vegan seitan steak in a blender and mix.
- Empty the mixture onto a clean work surface and knead by hand for a few minutes until a ball forms.
- Cut the ball into 4 parts, then roll each part using a rolling pin to obtain steaks about 1.5cm thick.
- Cook the steaks in a casserole dish or in a steamer for 25 minutes. The steaks will double in size.
- Meanwhile, combine the marinade ingredients in a freezer bag (the oil doesn’t necessarily mix with the rest of the ingredients).
- Once cooked, place the steaks in the bag filled with the marinade.
- Close the bag and let stand in the fridge for at least 30 min. Possibility of leaving them longer if the tasting is not planned immediately.
- Before serving the vegan seitan steaks, grill them on each side in a pan or barbecue without pouring the marinade.
- On the plates, brush the steaks with the remaining marinade.
