Vegetarian bibimbap

Bibimbap without meat

Bibimbap is a Korean dish with tofu and vegetables. An easy vegetarian dish for 2 people.

Preparation: 20 mins / Rest: 1h / Cooking: 50 mins

Ingredients : 

  • 110g firm tofu
  • 90g of wild rice or black rice
  • 1 carrot
  • 50g white radishes
  • 2 kale leaves
  • 75g of shiitake
  • rice vinegar: 1 teaspoon
  • soy sauce: 1 teaspoon
  • cane sugar: 1 teaspoon
  • 2 eggs
  • 1 nori sheet, cut into strips
  • black and white sesame seeds
  • olive oil

For the marinade: 

  • soy sauce: 1 teaspoon
  • rice vinegar: 1 teaspoon
  • sesame oil: 1 teaspoon
  • 1 piece of grated fresh ginger
  • 1 garlic clove, chopped

Preperation : 

  • In a dish, combine all the ingredients for the marinade.
  • Cut the tofu and place it in the dish and sprinkle it with the marinade
  • Film and place the 1 hour in the fridge, turning the pieces from time to time
  • Cook the rice
  • Drain it and let it cool
  • Cut the carrots and radishes into sticks
  • Drizzle with rice vinegar
  • Remove the central stalk of the kale leaves and slice
  • In a frying pan, add a little oil and brown the kale for 5 minutes
  • Book
  • Brown the mushrooms for 2 minutes with the soy sauce and sugar
  • Cook the fried eggs in a little oil
  • In the bowls, divide the rice, vegetables, mushrooms, tofu and nori sheets
  • Overhang each bowl with an egg and sprinkle with sesame seeds
  • Enjoy your lunch !
