
Bibimbap without meat
Bibimbap is a Korean dish with tofu and vegetables. An easy vegetarian dish for 2 people.
Preparation: 20 mins / Rest: 1h / Cooking: 50 mins
Ingredients :
- 110g firm tofu
- 90g of wild rice or black rice
- 1 carrot
- 50g white radishes
- 2 kale leaves
- 75g of shiitake
- rice vinegar: 1 teaspoon
- soy sauce: 1 teaspoon
- cane sugar: 1 teaspoon
- 2 eggs
- 1 nori sheet, cut into strips
- black and white sesame seeds
- olive oil
For the marinade:
- soy sauce: 1 teaspoon
- rice vinegar: 1 teaspoon
- sesame oil: 1 teaspoon
- 1 piece of grated fresh ginger
- 1 garlic clove, chopped
Preperation :
- In a dish, combine all the ingredients for the marinade.
- Cut the tofu and place it in the dish and sprinkle it with the marinade
- Film and place the 1 hour in the fridge, turning the pieces from time to time
- Cook the rice
- Drain it and let it cool
- Cut the carrots and radishes into sticks
- Drizzle with rice vinegar
- Remove the central stalk of the kale leaves and slice
- In a frying pan, add a little oil and brown the kale for 5 minutes

- Brown the mushrooms for 2 minutes with the soy sauce and sugar
- Cook the fried eggs in a little oil
- In the bowls, divide the rice, vegetables, mushrooms, tofu and nori sheets
- Overhang each bowl with an egg and sprinkle with sesame seeds
