Healthy recipe: Zucchini burrito

Ingredients :
  • 3 zucchini, washed and cut in half lengthwise
  • 2 tbsp. tablespoons of olive oil extra virgin
  • Salt and pepper
  • 1/2 onion, chopped
  • 2 garlic cloves, finely chopped
  • 1 kg of ground beef
  • 1 C. to coffee chili powder
  • 1 C. 1 teaspoon ground cumin
  • 1 C. teaspoon paprika
  • 120g red beans
  • 120g chopped cherry tomatoes
  • 120g of corn
  • 500g grated Gruyere

Preperation :

  • Preheat the oven to 180 ° C.
  • Hollow out the inside of the zucchini and cut the excess into pieces, saving them for later.
  • Place the cut zucchini halves on the side in the bottom of a baking dish and drizzle with a teaspoon of olive oil; Season with salt and pepper.
  • Bake until zucchini is bright green and just starting to soften, about 10 minutes.
  • In a large skillet over medium heat, heat the oil. Add the onion and chopped zucchini and cook until tender, about 5 minutes.
  • Stir in the garlic and cook until it smells good, about 1 minute more.
  • Add the ground beef, breaking up the meat with a wooden spoon. Cook until beef is no longer pink, about 6 minutes. Drain off the fat.
  • Stir in the chili, cumin and paprika, then season with salt and pepper.
  • Add the red beans, cherry tomatoes and corn.
  • Using a spoon, stir the mixture into the cored zucchini, then garnish with cheese.
  • Bake in the preheated oven until the zucchini is tender and the cheese is melted, about 15 minutes.
