
Healthy recipe: Zucchini burrito

Ingredients :
- 3 zucchini, washed and cut in half lengthwise
- 2 tbsp. tablespoons of olive oil extra virgin
- Salt and pepper
- 1/2 onion, chopped
- 2 garlic cloves, finely chopped
- 1 kg of ground beef
- 1 C. to coffee chili powder
- 1 C. 1 teaspoon ground cumin
- 1 C. teaspoon paprika
- 120g red beans
- 120g chopped cherry tomatoes
- 120g of corn
- 500g grated Gruyere
Preperation :
- Preheat the oven to 180 ° C.
- Hollow out the inside of the zucchini and cut the excess into pieces, saving them for later.
- Place the cut zucchini halves on the side in the bottom of a baking dish and drizzle with a teaspoon of olive oil; Season with salt and pepper.
- Bake until zucchini is bright green and just starting to soften, about 10 minutes.
- In a large skillet over medium heat, heat the oil. Add the onion and chopped zucchini and cook until tender, about 5 minutes.
- Stir in the garlic and cook until it smells good, about 1 minute more.
- Add the ground beef, breaking up the meat with a wooden spoon. Cook until beef is no longer pink, about 6 minutes. Drain off the fat.
- Stir in the chili, cumin and paprika, then season with salt and pepper.
- Add the red beans, cherry tomatoes and corn.
- Using a spoon, stir the mixture into the cored zucchini, then garnish with cheese.
- Bake in the preheated oven until the zucchini is tender and the cheese is melted, about 15 minutes.
